Small fry can be fried whole.<br \/>\nAny place you buy fish should smell fresh, no trace of bleach<\/span><br \/>\n<span style=\"color: #000000;\">or antiseptic, instead should exude the very attar<\/span><br \/>\n<span style=\"color: #000000;\">of the sea, shore, river or shoal which was their home.<\/span><br \/>\n<span style=\"color: #000000;\">Eschew asphyxiated fish, those with glaucous eyes<\/span><br \/>\n<span style=\"color: #000000;\">and limp flesh. Buy them scaled, gutted, extracted from crushed ice.<\/span><br \/>\n<span style=\"color: #000000;\">Once you have your catch, wash, pat dry. Salt and pepper<\/span><br \/>\n<span style=\"color: #000000;\">the cavity, stuff with smashed garlic and aromatics,<br \/>\nrelying on your own counsel and taste \u2014 I have a weakness<\/span><br \/>\n<span style=\"color: #000000;\">for basil and thyme and have taken to sumac, the dark<\/span><br \/>\n<span style=\"color: #000000;\">vermilion grains ground from the berries of the tropical<\/span><br \/>\n<span style=\"color: #000000;\">shrub related to mango and cashew; not the southern<\/span><br \/>\n<span style=\"color: #000000;\">US bush with its toxic resin, the poison of the same name.<\/span><br \/>\n<span style=\"color: #000000;\">Sumac,\u00a0<i>rhus coriaria\u00a0<\/i>to be precise, is harmless,<\/span><br \/>\n<span style=\"color: #000000;\">though far from innocuous. Its pungence lays out<\/span><br \/>\n<span style=\"color: #000000;\">a canvas on which aerian savours, here those of fish,<\/span><br \/>\n<span style=\"color: #000000;\">can be feathered or brushed in. In this case what was aquatic<\/span><br \/>\n<span style=\"color: #000000;\">transforms into a wing\u00e8d essence which, like a kite, flies<\/span><br \/>\n<span style=\"color: #000000;\">best in a steady wind tethered to the tang of the earth.<\/span><br \/>\n<span style=\"color: #000000;\">If, at this stage, you need lemon, maybe this was not<br \/>\nthe right fish. Many like citrus to veil\u00a0such miasma.\u00a0<\/span><br \/>\n<span style=\"color: #000000;\">On this point, accomodate your guests. Quarter a couple<\/span><br \/>\n<span style=\"color: #000000;\">with your sharpest knife once the sumptuous \u00a0fish,<\/span><br \/>\n<span style=\"color: #000000;\">after fifteen minutes in an intensely hot\u00a0milieu<\/span><br \/>\n<span style=\"color: #000000;\">(flesh at the thickest point showing 145 F)<\/span><br \/>\n<span style=\"color: #000000;\">is deposited with a flourish on a trivet centerpiece \u2014<\/span><br \/>\n<span style=\"color: #000000;\">but only after a short rest, so its juices can seize.<\/span><br \/>\n<span style=\"color: #000000;\">Slide off portions from the top half with a spatula,<\/span><br \/>\n<span style=\"color: #000000;\">ostentatiously detach the bone structure from the tail,<\/span><br \/>\n<span style=\"color: #000000;\">then dangle the head before the gathered assembly,<\/span><br \/>\n<span style=\"color: #000000;\">whose eyes should still look out intact, alert to their fate.<\/span><br \/>\n<span style=\"color: #000000;\">This is when you learn who likes fish, as opposed to<\/span><br \/>\n<span style=\"color: #000000;\">pescatarians from principle. The former will put dibs\u00a0<\/span><br \/>\n<span style=\"color: #000000;\">on the eyes and those delectable morsels behind \u00a0the cheeks.<br \/>\nThe latter will avert their eyes, praising\u00a0their choice filet.\u00a0<\/span><\/p>\n<p>***<br \/>\n<em>Nasrin, whose home cuisine is Caspian, will get\u00a0the joke about fish-head eaters, the slur desert plateau Iranians apply to the denizens of her home province of Gilan. I have surprised myself here with a second in a new \u00a0sequence of poems,<\/em> Collations and other Delights.\u00a0<em>I had given up on writing poetry about food. To do so, I have reverted to \u00a0but embraced with gusto modes of poetry long fallen from fashion, the encyclopedic, the ekphrastic and the comic. One feature shared by poetry and cuisine is delight. Only the highest\u00a0of <\/em>haute cuisine<em>\u00a0plays with\u00a0comedy in food.
